Ingredients

  1. 300 gms chicken leg (boneless)
  2. 20 gms ginger paste
  3. 20 gms garlic paste
  4. 50 gms curd
  5. 10 gms garam masala
  6. Salt to taste

For Rice

  1. 1 kg basmati rice (soaked for 20 minutes)
  2. Mint leaves (10 gms)
  3. Salt to taste

Whole Spices

  1. 1 small cardamom
  2. 1 cinnamon stick
  3. 1 bay leaf
  4. 3 gms shahi jeera
  5. 1 gm cloves
  6. 1 gm mace

Other Ingredients

  1. 50 ml desi ghee
  2. 100 gms onion (sliced)
  3. 30 gms red chili powder
  4. 0.1 gm saffron (soaked in warm milk)
  5. 50 gms butter

Murgh Biryani Recipe Preparation Steps

1. Marinate Chicken : Wash and pat dry the chicken. Mix it with ginger-garlic paste, curd, garam masala, and salt. Let it rest for at least 30 minutes.

2. Cook Rice : Boil basmati rice in water flavored with mint leaves and salt until partially cooked.

3. Prepare Chicken : Heat desi ghee in a thick-bottomed pan. Add whole spices and sliced onions; cook until golden brown. Add marinated chicken and cook for about five minutes.

4. Layering :In the same pan, layer the partially cooked rice over the chicken mixture. Sprinkle saffron milk on top.

5. Steam Cooking : Cover the pan with a tight lid and cook on low heat until steam escapes from the lid.

6. Serve : Fluff the biryani gently and serve hot with raita or salan.
