Eid Special Mutton Biryani: A Flavorful and Aromatic Recipe

Instructions :

Step 1: Prepare Spices

1. Roast Spices :  In a dry pan, roast cinnamon, cardamom, cloves, and peppercorns until fragrant. Let cool and grind into a fine powder.

2. Prepare Biryani Masala : Use store-bought or homemade biryani masala.

 Step 2 : Cook Mutton

  1. Heat Oil : In a large pressure cooker or pan, heat oil over medium heat.
  2. Add Spices : Add cumin seeds, bay leaves, black cardamom, green cardamom, and cinnamon stick. Let them sizzle.
  3. Add Onions : Add sliced onions and fry until golden brown.
  4. Add Ginger-Garlic Paste : Mix well and cook for a minute.
  5. Add Tomatoes : Add cubed tomatoes and cook until they are mushy.
  6. Add Mutton : Add mutton pieces and fry for about 7-8 minutes on high heat.
  7. Add Spices and Yogurt : Add turmeric powder, red chilli powder, biryani masala, salt, and yogurt. Mix well.
  8. Add Water : Add about 150 ml of water (considering mutton and tomatoes will release moisture). Cover and cook until the mutton is tender (about 10-12 minutes after the first whistle).

Step 3: Prepare Rice

  • Soak Rice : Soak basmati rice for about an hour.
  • Boil Rice : Boil the soaked rice in plenty of water with salt until it is 3/4th cooked. Drain and set aside.

Step 4: Layer and Steam

  • Layering : In a large pot or handi, create a layer of mutton mixture.
  • Add Rice : Add a layer of boiled rice over the mutton.
  • Garnish : Sprinkle chopped coriander, mint leaves, and fried onions.
  • Repeat Layers : Repeat the layers one more time, ending with a rice layer.
  • Saffron Milk (optional) : Drizzle saffron milk over the top layer for extra flavor and color.
  • Steam : Cover the pot with a tight lid or seal with foil. Steam cook on low heat for about 10-15 minutes.

Step 5: Serve

  1. Rest : Let the biryani rest for about 15 minutes before serving.
  2. Serve with Raita : Serve hot with a side of raita or salad.

Tips:

Adjust spice levels according to your preference.

Use large mutton pieces for better flavor.

Ensure there is some gravy when layering to keep the biryani moist.
