Pani Puri, also known as Golgappa or Puchka, is one of the most loved street snacks in India. It consists of crispy, hollow puris filled with spicy, tangy tasting water (pani) and a delicious potato and chickpea stuffing. Which creates an explosion of flavor in every bite.

How to make Pani Puri

Ingredients

  1. 1/2 cup suji (semolina/rava)
  2. 1 tbsp maida (optional)
  3. A pinch of salt
  4. Warm water to knead
  5. Oil for deep frying

Method

1. Mix suji, maida, and salt. Knead into a stiff dough with warm water.
2. Rest for 20 minutes, then roll into small puris.
3. Deep fry on medium flame until golden & puffed.
4. Let them cool & crisp up.

How to make Masala Stuffing for Pani Puri

Ingredients

  • 2 boiled potatoes (mashed)
  • 1/2 cup boiled chana (optional)
  • Chaat masala, salt, red chili powder
  • Finely chopped onions & coriander
  • Mix all together for the tangy filling!

For Spicy Pani

Ingredients: 

  • 1/2 cup mint leaves
  • 1/2 cup coriander leaves
  • 1-inch ginger
  • 1 green chili
  • 1 tsp roasted jeera powder
  • 1 tsp chaat masala
  • Salt to taste
  • 1 tbsp tamarind pulp
  • 3-4 cups cold water
  • 2-3 tbsp soaked salted boondi

How to make Pani Puri

Gently open each puri, fill it with the potato-chickpea mixture, dip it in cold water and eat immediately in one go to enjoy the explosion of flavour.
